Fúzió by Textúra & Borkonyha brings the distinctive cuisine of the two restaurants to the Market in a new, more relaxed form, where a wider audience can get to know the chef’s gastronomic approach and his Hungarian-style bistro dishes.

One of the core principles of Time Out Market’s international concept is continuous curation and renewal, so a new food outlet will soon be joining the Budapest food market, bringing a new flavour to the Market’s offering while further enriching the culinary experience it offers local and international audiences.

Fúzió by Textúra & Borkonyha arrives at the Market under the professional leadership of chef Sárközi Ákos, bringing guests the distinctive gastronomic worlds of two iconic Budapest restaurants in a new, more relaxed format.

The Fúzió concept was born from the professional collaboration of two leading Budapest restaurants, Borkonyha and Textúra. Borkonyha is one of the most consistent names in Hungarian hospitality: it won its Michelin star in 2014 and has kept it ever since. In its kitchen, traditional and contemporary Hungarian gastronomy meet in elegant harmony with Transylvanian traditions and international influences.

Textúra joined as a sister restaurant in 2018 and is just now beginning a new chapter: it is boldly moving closer to the direct, likeable world of bistros – in both food and atmosphere – while its individuality continues to come from its kitchen, known for creativity and a love of experimentation.

The gastronomic concept of the two restaurants is shaped jointly by chef and owner Sárközi Ákos and his co-owners Horváth Tamás and Kalocsai Zoltán. Although Borkonyha and Textúra each have a different character, in everyday practice they complement each other closely – and Fúzió carries forward this shared professional approach and duality.

An important consideration in creating the concept was to bring the gastronomic worlds of the two restaurants closer to guests in a form that suits the more direct, relaxed way Time Out Market works. Fúzió also hopes to appeal to an audience that goes to classic restaurants less often but is open to quicker, more casual yet high-quality gastronomic experiences.

Hungarian-style bistro cuisine arrives at the Market in a new form
At the heart of Fúzió’s kitchen is Hungarian-style bistro cuisine, which also reflects Sárközi Ákos’s playfulness and creative thinking. The dishes draw on Hungarian gastronomic traditions while being reborn in a modern, personal approach.

For Time Out Market Budapest’s guests, three signature dishes are being created that will be available only at the Market: duck liver with Tokaji Aszú, pear and stangli; juicy roast pork brioche in thyme sauce; and apricot blossom “Rákóczi túrós”.

The duck liver, for example, shows the meeting of tradition and creativity: Tokaji Aszú and pear are characterful ingredients of Hungarian cuisine. The juicy roast pork brioche in thyme sauce, meanwhile, was inspired by a classic Hungarian dish, szalontüdő.

For Sárközi Ákos, one of Fúzió’s most important aims is precisely to break down the distance between fine dining and guests. At the Market, he sees an opportunity to present his own gastronomic approach in a more direct form that is easier for everyone to understand.

The guest experience matters as much as what goes on the plate
Márton Tibor, general manager and coordinator of Borkonyha and Textúra, will also play a key role in Fúzió’s day-to-day operations. His task is to coordinate the team, ensure consistent professional standards and bring together the running of the new concept. Preparations for the opening on 11 September are in full swing: test cooking is under way, the team is taking shape, and the goal is to create a guest experience that goes beyond a single meal.

“It is a huge source of pride for me to represent Fúzió at Time Out Market. It is also a new professional journey and challenge: stepping outside the walls of a traditional restaurant, we are arriving in a marketplace where gastronomy and culture meet directly and create a shared experience. We want Fúzió to be not just a stop for guests but a gastronomic journey they will be happy to return to,” said Márton Tibor, general manager of Borkonyha and Textúra.

Fúzió will also help guests choose from its menu: the team’s aim is that, through presentations of the dishes and personal recommendations, everyone can comfortably discover a new side of Hungarian-style bistro cuisine.

According to reports, Fúzió by Textúra & Borkonyha is replacing M’eat by Rácz Jenő.
