A change of concept at Caviar & Bull Budapest

The restaurant associated with chef Marvin Gauci continues to build on premium ingredients and international flavours, but the aim now is to make the fine dining experience accessible to a wider audience.

The new menu follows the concept of the Maltese Caviar & Bull, while also including dishes tailored to the tastes of guests in Budapest.

The premium ingredients include sturgeon caviars – among them Beluga and Osietra – fresh oysters, scallops, Japanese A5 Kagoshima Wagyu and New Zealand lamb.

Greater emphasis has also been placed on one of the restaurant’s best-known dishes, the Lobster Popcorn. The crispy lobster is served with chilli honey and spicy mayonnaise and, as part of the new concept, now appears on the menu at a lower price.

“When we opened the Budapest restaurant almost ten years ago, our aim was to create a fine dining restaurant of international standard. But it is always worth continuing to evolve, so we have reshaped our offering so that even more guests can come to us,” said Marvin Gauci.

Uncensored, which operates within Caviar & Bull, continues to offer a unique gastronomic experience. Its executive chef is Dávid Borbély, who also runs the kitchen of the whole house.

During the Uncensored dinner, guests can experience the gastronomy of five countries in a single evening. The courses are complemented by 360-degree projection, lighting, music and visual effects, so that not only the food but also the atmosphere of each destination becomes part of the dinner.

The gastronomic journey starts in Hungary with duck liver, peach jelly and Mangalica ham, followed by the flavours of Russia, China, the United States and Brazil.

Uncensored has kept its round-the-world journey concept, while the price of the multi-course dinner has been reduced significantly, aiming to attract a wider range of guests.
