Tokaj's newest restaurant, Galuschka Bistro & Garden with its spacious garden, combines the heritage of the wine region with genuine hospitality and refined flavours.
The complete renovation of the building that houses Galuschka Bistro & Garden took a year: built in the late 19th century, it served as a kindergarten for almost 100 years and had stood empty for decades. Today it is one of Tokaj's hidden treasures waiting to be discovered, welcoming visitors with a wonderful garden.
Opened in early March at Bethlen Gábor utca 13 in the heart of Tokaj, the venue is an intimate, family-style Hungarian bistro where guests can enjoy tasty bites, excellent wines and friendly conversation at tables with checked tablecloths.
The garden surrounding the building is a real rarity in the centre of Tokaj. It was deliberately designed when the building was constructed – not merely as an ornamental garden, but as a prestigious space that defines the building's atmosphere. “The garden is one of our most important assets: a space where Tokaj wines, flavours and built heritage come together into a single experience. A place where nature and gastronomy do not merely complement but reinforce each other,” said Enikő Holczreiter, the restaurant manager.
The restaurant reinterprets Tokaj traditions with modern, clean-lined cuisine, local ingredients and premium wines. “For us, it's all about eating well, drinking well and having a good time! Through dishes, flavours, aromas and wines, we show what Tokaj hospitality means to us,” said the bistro's chef, Bence Várkonyi.
“Honest chicken paprikash” on the menu
The bistro's menu is built on the traditions of the Tokaj wine region. The dishes feature seasonal and local ingredients, and the plates carry not only flavour but also a story. Classics of Hungarian cuisine are reborn with a new approach, making the experience both familiar and exciting.
The secret of the Galuschka experience lies in refined, clean flavours and, of course, in Hungarian cuisine: the menu features duck liver marinated in aszú, egg dumplings (tojásos galuska) and chicken paprikash, as well as saddle of venison, breaded Mangalica pork and golden dumplings (aranygaluska).
Naturally, the carefully curated wine list includes the “holy trinity” of the Tokaj wine region: golden Furmint, floral Hárslevelű and aromatic Muscat, from the region's most renowned wineries.
